TEX-MEX CHICKEN SALAD
- To make the salad, in a large bowl gently toss together the following ingredients: 3 cups shredded rotisserie chicken, 1 16 oz. can rinsed pinto beans, 1 head of romaine lettuce that’s been cut up into small pieces, 1 cup of fresh corn kernels scraped from an ear of corn, 1 cup fresh cilantro, 1 diced avocado, and 1/2 thinly sliced red onion.
- To make the dressing, in a smaller bowl whisk together 1/4 cup fresh lime juice, 2 Tbsp sour cream, 1 Tbsp olive oil, 1 tsp honey, and 1/2 tsp each salt and pepper.
- Drizzle the dressing over salad and gently toss. Tortilla chips go great with this salad, too.
