Instead of tossing those unused herbs, have you considered freezing them? It’s easy to do. Simply pul off a few leaves and put them in your ice cube tray, along with 1 Tbsp. oil (olive oil works well). Put the tray in the freezer and when frozen solid, transfer the cubes into a small plastic freezer bag. Then, when you get ready to use them, take out a few cubes and throw them into a lightly heated pan.
