The Best Fried Corn Dish EVER!
- Shuck 8 ears of corn by holding the tail and cutting the kernels off into a bowl. Don’t cut too close to the cob. Leave about 1/3 of the kernel attached to the cob. Set aside in bowl.
- Using a spoon, scrape the remaining bits of corn and corn milk into a saucepan.
- Cook corn milk and bits scraped from cob over medium heat. Add 2 Tbsp extra-virgin olive oil, along with 4 Tbsp butter for 6 minutes. Stir in kernels and saute for 10-12 minutes, until creamy. Add salt and cracked black pepper to taste.
