Need a great and easy recipe for delicious energy bars that doesn’t include ingredients you can’t pronounce and certainly don’t want to eat? Here’s a quick recipe that can be whipped up in only 10 minutes and stored in the refrigerator for over a week!
- Pulse 1 1/2 cups almonds until finely chopped in food processor
- Add 2 cups pitted dates, 1/2 teaspoon vanilla extract, and 1/8 tsp salt and mix until combined
- Form mixture into a dozen bars and store in refrigerator
Feeling more creative? Substitute the almonds with walnuts or pistachios, and then swap the dates with figs and add 1/2 tsp ground cinnamon for a “Baklava Bar” flavor. Or, you could use macadamia nuts instead of almonds and half the dates for dried pineapple, then throw in some shredded coconut for a “Pina Colada” bar.
