Boiling CORN is the worst way to cook it (yet the most common way). Boiling dissolves the majority of it’s nutrients into the water. The best way to cook corn is to microwave or grill your ears (of corn). This way, the corn retains all of those wonderful nutrients and tastes delicious. And corn’s nutrients may be more impressive than you think, as the deep yellow varieties can have up to 58 times more beta-carotene, lutein, and zeaxanthin than white corn. Note – Lutein and zeaxanthin help reduce the risks of macular degeneration and cataracts, two common eye diseases.
